Get your greens with this light and refreshing weeknight-ready salad. Arugula is a beautiful bitter green that can stimulate the release of bile from the gall bladder to improve digestion.
Zingy Citrus Rocket Salad
Serve alone as a dinner salad, or alongside herbed fish fritters for a company-ready dinner.
Dressing

½ lemon, juiced

2 tbsp olive oil
-
1 tbsp apple cider vinegar

½ tsp Dijon mustard
-
1 tsp maple syrup
Salad
-
4 cups arugula
-
½ grapefruit, cut into segments
-
½ avocado, sliced
-
dash of paprika for garnish
Instructions

Add dressing ingredients to a small mason jar and shake until combined.

Toss arugula with dressing and transfer to plates.

Top each serving with grapefruit segments and avocado slices.

Finish the salad with a little salt and pepper to taste, and a dash of paprika.
