Fertility-Friendly Rainbow Chicken Caesar Salad

Ingredients:

  • 1 cup avocado oil mayonnaise
  • 1⁄4 cup freshly squeezed lemon juice
  • 3 anchovies (or 2 tbsp capers)
  • 1 1⁄4 tablespoons Dijon mustard
  • 1 tablespoon extra virgin olive oil
  • 1⁄2 teaspoon minced garlic
  • 1⁄4 teaspoon freshly ground black pepper

Yield:

2 servings

Instructions:

  1. Using a food processor or stick blender, blend all ingredients until smooth.

Assemble the Salad

  1. 2 sliced cooked chicken breasts, hot or chilled 
  2. 1 bunch romaine lettuce or another leafy green, washed, drained, and destemmed
  3. 2 chopped carrots
  4. 1 chopped tomato
  5. 1 julienned yellow bell pepper
  6. ¼ c diced red onion

Instructions

  1. Place all salad vegetables in a large serving bowl. Add dressing and toss to combine.
  2. Divide salad between two serving plates. Arrange sliced chicken on top. Serve and enjoy!
