No-Waste Carrot Top Pesto
Ingredients:
- 2 bunches carrots (only the greens)
- 2 cloves garlic (chopped)
- 1 shallot (chopped)
- 1⁄2 cup walnuts, sliced almonds, or pine nuts
- 1⁄2 cup olive oil
- 1⁄4 cup nutritional yeast
- 2 teaspoons apple cider vinegar
- salt and pepper

Instructions:
Place all the ingredients in a food processor and process until well broken down, but not uniformly smooth (a little texture makes a pesto extra lovely).
