No-Waste Carrot Top Pesto

Ingredients:

  • 2 bunches carrots (only the greens)
  • 2 cloves garlic (chopped)
  • 1 shallot (chopped)
  • 1⁄2 cup walnuts, sliced almonds, or pine nuts
  • 1⁄2 cup olive oil
  • 1⁄4 cup nutritional yeast
  • 2 teaspoons apple cider vinegar
  •   salt and pepper

Instructions:

Place all the ingredients in a food processor and process until well broken down, but not uniformly smooth (a little texture makes a pesto extra lovely).
